HELLO SPRING!


Today is 21st of March, it means that SPRING BEGINS!!. So I would put a welcome to spring :)

Eclairs au chocolat with healthy chocolate filling.


  I love this eclairs, first, because they are healthy, and second, beacause they are really simple and quick to make.
   This recipe makes around 15 eclairs.


INGREDIENTS


Dough:                                        Filling:                                                     Topping:                                                                  +70g flour                          +60g flour                                         +Around 100g chocolate
+55g butter                        +75g sugar
+140ml water                    +50g cocoa powder
+2 eggs (beaten)               +vanilla bean (or 1 bag
+1 pinch of salt                       of vanilla sugar and then,
+1 pinch of sugar                    instead of 75g sugar, 68 g)                                      
                                               +1/2 l milk                  
                                               +2 egg yolks

PROCESS


Dough:
  1. Preheat oven to 200ªC.
  2. Melt butter with water in a saucepan.
  3. Add flour and let boil stirring constantly.
  4. Remove from heat and add salt and sugar.
  5. Add beaten eggs gently.
  6. Fill a pastry bag (without nozzle) with dough and form stripes on a backing sheet, covered with backing paper, with enough room for prevent sticking  at the growth.
  7. Sprinkle with water and bake for 20-25 min.
  8. Make a hole on the end of each eclair with the narrow nozzle of the pastry bag and put again in the oven for 10 min with the door slightly open and heat turned off or lowed, so that the eclairs can dry inside.
Filling:
  1. Boil in a saucepan the milk with the vanilla.
  2. Beat eggs with sugar and add  flour.
  3. Add the milk to the egg mix and return to the saucepan. Boil until it thicks.
  4. Add cocoa powder.
  5. Let it cool until the eclairs are done. Before replenish, you should stir the filling so that lumps desappear.
Getting together:
  1. Fill the eclairs using the pastry bag (narrow and long nozzle) with the superb chocolate stuffing. 
  2. Melt the chocolate in the microwave [periods of 30 s, stir it between each period, until the chocolate is not melted at all (you DON'T have to heat it too much, it will make white spots)] and dip the top of the eclairs. 
  3. Let cool the chocolate. If it was good melted, it will make a satisfying noise when you bite.
  4. Don't wait till tomorrow if you want them to be in the best condition.

Touch of summer! It´s LECHE MERENGADA time!!

Today is a really hot day and it was time to lower the temperature! so I did this delicious refreshing drink. Hope you  like it :) :

LECHE MERENGADA RECIPE FOR 3 GLASSES:




1/2 l Milk
1 Lemon´s peel (peel with a potato peeler so do not take anything white, it only make a bitter flavour)
1 Cinnamon stick
45 g Sugar
1 Egg white

Procces:

1.-Put milk with lemon´s peel , cinnamon stick and sugar in a small pot and  turn on big fire, bring to a boil.
2.-When the milk stars to boil , reduce to low fire and let the milk heat for 5 minutes.
3.-Turn off and let be cold.
4.-Strain, put in a bowl (preferably a metalic one) and place in the freezer for 2 hour.
5.-Just before taking out the milk mix, beat the egg white until stiff.
6.-If milck have crystals, beat with the beater ( ^^ DOUBLE! I have do it again! hahaha ) until smooth.
7.-Mix the meringue with the milk mix and serve in the vessels.
8.-If you want you can decorate them with a little ground cinnamon.
9.-Let´s delight! :D

Today...COOKIES! :D

Oh yes!  can you believe it? :D I 've made cookies! and THEY WERE BEAUTIFUL!! As beautiful as purchased cookies ^^
Today was a friend's birthday, so I decided to make a yummy present for him :)
I leave you here the recipe for 2 baking sheets of cookies, so you can see how delicious they are :) :



  • 1 1/4 cups all-purpose flour (about 5 1/2 ounces)
  • 1 cup regular oats
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar 
  • 1/4 cup packed brown sugar (BE careful with brown sugar, it isn´t really cheap :S )
  • 1/4 cup butter, softened
  • 1 1/2 teaspoons vanilla extract
  • large egg
  • 1/4 cup chopped pecans (I used walnuts, so you can use any type of nuts), toasted
  • 1/4 cup semisweet chocolate chips
  • You need for prepare:
  • 2 baking sheets covered with greaseproof paper or any kind of fat
  • 1 large bowl
  • 1 mixer with two kind of blenders ( the normal and the screw-shaped one)
  • 1 oven  (of course!! :D )
  • 1.-Beat  sugars, salt, egg, vanilla and butter  together  in a large bowl with a mixer until well mixed ( double word! ^^ ). 
  • 2.-Add oats.
  • 3.- Sieve flour with backing powder and backing soda. 
  • 4.-Beat all together with the screw-shaped blade of the mixer until well blended. 
  • 5.-Add chocolate chips and nuts and mix all one more time.
  • NOW IT'S TIME TO SHAPE UP OUR CREATION!! :D 
  • 6.-Preheat oven to 350ºF or 180ºC
  • 7.-Grab a tablespoon and take dough until spoon is covered (not protrude upward).Press de dough a little with the palm and place on backing sheet and repaet the process until  one backing sheet is finished, then put in oven. While the cookies are baking ( around 12 minutes, until cookies are browned) prepare the other baking sheet.
  • 8.-When the firts baking sheet is finished take it off and DONT TOUCH THEM!  let them be cold. Put in the other one, and  wait until cookies are finished and let them be cold.
  • 9.-Now, the most important step , int's time to enjoy!! But be carefull, its prefarebla to eat less cookies and  preserve your build. :)
